Context
Lagosta is a Swiss, sustainable marine aquaculture company, developing an innovative model for the farming of the European spiny lobster, Palinarus elephas, focusing on aquaculture, blue biotechnology and conservation. The R&D and production site is located in Monaco. They farm the European spiny lobster in an organic and sustainable manner, and recycle its associated byproducts to create additional value. They also put great care into making sure this species’ population will survive sustainably in the wild through a conservation plan of larvae reintroduction in the wild.
Objectives
The immersion project has two facets. The first focuses on the aspects of conservation and the second on the valuation of co-products.
